  • Whole wheat flatbread - 150 grams

  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Chickpeas - 200 grams, cooked
  • Tomato - 1 medium, diced
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the diced carrots, bell pepper, and zucchini, cooking for about 5-7 minutes until the vegetables are tender.
  4. Add the diced tomato, cooked chickpeas, vegetable broth, ground cumin, paprika, salt, and black pepper, then stir well.
  5. Bring the mixture to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld.
  6. While the stew is cooking, tear the whole wheat flatbread into bite-sized pieces and lightly toast them in a separate pan until golden.
  7. To serve, place the torn flatbread in a bowl and ladle the vegetable stew over the top. Garnish with chopped fresh parsley.
