- Chickpeas - 200 grams, cooked

- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
- Add minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced carrots, bell pepper, and zucchini, cooking for about 5-7 minutes until the vegetables are tender.
- Add the diced tomato, cooked chickpeas, vegetable broth, ground cumin, paprika, salt, and black pepper, then stir well.
- Bring the mixture to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld.
- While the stew is cooking, tear the whole wheat flatbread into bite-sized pieces and lightly toast them in a separate pan until golden.
- To serve, place the torn flatbread in a bowl and ladle the vegetable stew over the top. Garnish with chopped fresh parsley.
