  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon (optional for heat)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, for juice

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, diced bell peppers, and zucchini to the skillet. Cook for an additional 5-7 minutes until the vegetables begin to soften.
  4. Stir in the diced tomatoes, chickpeas, ground cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  5. Transfer the skillet to the preheated oven and bake for 15 minutes, allowing the flavors to meld.
  6. Remove the skillet from the oven and squeeze fresh lemon juice over the top. Garnish with chopped parsley before serving.
