- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon (optional for heat)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon - 1, for juice
Steps
- Preheat your oven to 180°C (350°F).
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, diced bell peppers, and zucchini to the skillet. Cook for an additional 5-7 minutes until the vegetables begin to soften.
- Stir in the diced tomatoes, chickpeas, ground cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Transfer the skillet to the preheated oven and bake for 15 minutes, allowing the flavors to meld.
- Remove the skillet from the oven and squeeze fresh lemon juice over the top. Garnish with chopped parsley before serving.
