Ingredients

  • All-purpose flour - 150 grams
  • Unsalted butter - 75 grams (cold, cubed)
  • Water - 50 ml (ice cold)
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium (finely chopped)
  • Red bell pepper - 1 (diced)
  • Green bell pepper - 1 (diced)
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Eggs - 2
  • Fresh parsley - for garnish
  • Salt and pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add the ice-cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion, red bell pepper, and green bell pepper, sautéing until soft, about 5-7 minutes.
  5. Stir in the minced garlic, cumin, and paprika, cooking for an additional minute.
  6. Add the tomato paste and canned diced tomatoes. Simmer for about 10 minutes until the mixture thickens. Season with salt and pepper to taste.
  7. Roll out the chilled dough on a floured surface to fit your tart pan. Press the dough into the pan and trim any excess.
  8. Spread the tomato and pepper mixture evenly over the tart base. Make two small wells in the mixture and crack an egg into each well.
  9. Bake in the preheated oven for 20-25 minutes, or until the eggs are set to your liking.
  10. Remove from the oven, garnish with fresh parsley, and serve warm.
