- All-purpose flour - 150 grams
- Unsalted butter - 75 grams (cold, cubed)
- Water - 50 ml (ice cold)
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Onion - 1 medium (finely chopped)
- Red bell pepper - 1 (diced)
- Green bell pepper - 1 (diced)
- Garlic - 2 cloves (minced)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 400 grams
- Eggs - 2
- Fresh parsley - for garnish
- Salt and pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add the ice-cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion, red bell pepper, and green bell pepper, sautéing until soft, about 5-7 minutes.
- Stir in the minced garlic, cumin, and paprika, cooking for an additional minute.
- Add the tomato paste and canned diced tomatoes. Simmer for about 10 minutes until the mixture thickens. Season with salt and pepper to taste.
- Roll out the chilled dough on a floured surface to fit your tart pan. Press the dough into the pan and trim any excess.
- Spread the tomato and pepper mixture evenly over the tart base. Make two small wells in the mixture and crack an egg into each well.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set to your liking.
- Remove from the oven, garnish with fresh parsley, and serve warm.
