- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Tomatoes - 400 grams, chopped (canned or fresh)
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chili powder - 1/2 teaspoon (optional for heat)
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 4 large
Steps
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and sauté for 5 minutes until translucent.
- Stir in the minced garlic, red bell pepper, and green bell pepper. Cook for another 5 minutes until the peppers are softened.
- Add the chopped tomatoes, paprika, cumin, salt, black pepper, and chili powder (if using). Stir well and let it simmer for 10 minutes until the sauce thickens.
- Make four small wells in the sauce and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
- Once done, remove from heat and sprinkle with fresh parsley before serving.
