Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Tomatoes - 400 grams, chopped (canned or fresh)
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili powder - 1/2 teaspoon (optional for heat)
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 4 large

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for 5 minutes until translucent.
  3. Stir in the minced garlic, red bell pepper, and green bell pepper. Cook for another 5 minutes until the peppers are softened.
  4. Add the chopped tomatoes, paprika, cumin, salt, black pepper, and chili powder (if using). Stir well and let it simmer for 10 minutes until the sauce thickens.
  5. Make four small wells in the sauce and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
  6. Once done, remove from heat and sprinkle with fresh parsley before serving.
