- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Shrimp - 100g, peeled and deveined
- Calamari - 100g, cleaned and sliced
- Fresh parsley - 2 tablespoons, chopped
- Chili flakes - 1/4 teaspoon (optional)
Steps
- Preheat your oven to 200°C (400°F). Cut the eggplant in half lengthwise and score the flesh in a crisscross pattern. Drizzle with 1 tablespoon of olive oil and sprinkle with salt, then place cut-side down on a baking sheet.
- Roast the eggplant in the preheated oven for about 25-30 minutes, or until the flesh is soft and slightly charred. Remove from the oven and let cool slightly.
- While the eggplant is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp and calamari to the skillet, season with ground cumin, black pepper, paprika, and chili flakes (if using). Cook for 4-5 minutes, or until the shrimp are pink and the calamari is tender. Remove from heat and stir in lemon juice and chopped parsley.
- Scoop out the roasted eggplant flesh and place it in a bowl. Mash it with a fork until smooth and combine it with the seafood mixture, adjusting seasoning if necessary.
- Serve the caviar d'aubergine warm or at room temperature, garnished with additional parsley if desired.
