Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Shrimp - 100g, peeled and deveined
  • Calamari - 100g, cleaned and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. Preheat your oven to 200°C (400°F). Cut the eggplant in half lengthwise and score the flesh in a crisscross pattern. Drizzle with 1 tablespoon of olive oil and sprinkle with salt, then place cut-side down on a baking sheet.
  2. Roast the eggplant in the preheated oven for about 25-30 minutes, or until the flesh is soft and slightly charred. Remove from the oven and let cool slightly.
  3. While the eggplant is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add the shrimp and calamari to the skillet, season with ground cumin, black pepper, paprika, and chili flakes (if using). Cook for 4-5 minutes, or until the shrimp are pink and the calamari is tender. Remove from heat and stir in lemon juice and chopped parsley.
  5. Scoop out the roasted eggplant flesh and place it in a bowl. Mash it with a fork until smooth and combine it with the seafood mixture, adjusting seasoning if necessary.
  6. Serve the caviar d'aubergine warm or at room temperature, garnished with additional parsley if desired.
