- Cumin powder - 1 teaspoon

- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Prick the eggplant several times with a fork and place it on a baking tray.
- Roast the eggplant in the preheated oven for about 30-35 minutes until the skin is charred and the flesh is soft.
- Remove the eggplant from the oven and let it cool for a few minutes before peeling off the skin.
- In a food processor, combine the roasted eggplant flesh, garlic, tahini, olive oil, lemon juice, cumin, paprika, salt, and black pepper.
- Blend until smooth and creamy, adjusting the seasoning to taste.
- Transfer the caviar d'aubergine to a serving bowl and drizzle with a little extra olive oil.
- Garnish with chopped fresh parsley and serve with warm pita bread or fresh vegetables.
