Ingredients

  • Eggplant - 250 grams
  • Garlic - 2 cloves
  • Tahini - 30 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Prick the eggplant several times with a fork and place it on a baking tray.
  3. Roast the eggplant in the preheated oven for about 30-35 minutes until the skin is charred and the flesh is soft.
  4. Remove the eggplant from the oven and let it cool for a few minutes before peeling off the skin.
  5. In a food processor, combine the roasted eggplant flesh, garlic, tahini, olive oil, lemon juice, cumin, paprika, salt, and black pepper.
  6. Blend until smooth and creamy, adjusting the seasoning to taste.
  7. Transfer the caviar d'aubergine to a serving bowl and drizzle with a little extra olive oil.
  8. Garnish with chopped fresh parsley and serve with warm pita bread or fresh vegetables.
