Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Tahini - 4 tablespoons
  • Water - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Whole wheat flour - 150 grams
  • Warm water - 100 ml
  • Active dry yeast - 1/2 teaspoon
  • Maple syrup - 1 teaspoon
  • Fresh parsley - a handful, chopped

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Wash and cut the cauliflower into small florets. Toss them in a bowl with olive oil, salt, cumin, paprika, coriander, and garlic powder until well coated.
  3. Spread the seasoned cauliflower on a baking sheet and roast for 20 minutes or until golden and tender, stirring halfway through.
  4. While the cauliflower is roasting, prepare the pizza dough. In a small bowl, combine warm water, active dry yeast, and maple syrup. Let it sit for 5 minutes until frothy.
  5. In a mixing bowl, combine whole wheat flour and a pinch of salt. Add the yeast mixture and knead until a smooth dough forms. Let it rest for 10 minutes.
  6. In another bowl, mix tahini, water, and lemon juice until smooth to create the tahini sauce.
  7. Once the dough has rested, roll it out on a floured surface into a 10-inch round shape.
  8. Transfer the rolled dough to a baking sheet lined with parchment paper.
  9. Spread the tahini sauce evenly over the dough.
  10. Once the cauliflower is done roasting, distribute it evenly over the tahini-coated pizza base.
  11. Return the pizza to the oven and bake for an additional 15-20 minutes until the crust is golden and crispy.
  12. Remove from the oven, sprinkle with chopped parsley, slice, and serve warm.
