- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon

- Tahini - 4 tablespoons
- Water - 2 tablespoons
- Lemon juice - 1 tablespoon
- Whole wheat flour - 150 grams
- Warm water - 100 ml
- Active dry yeast - 1/2 teaspoon
- Maple syrup - 1 teaspoon
- Fresh parsley - a handful, chopped
Steps
- Preheat your oven to 220°C (428°F).
- Wash and cut the cauliflower into small florets. Toss them in a bowl with olive oil, salt, cumin, paprika, coriander, and garlic powder until well coated.
- Spread the seasoned cauliflower on a baking sheet and roast for 20 minutes or until golden and tender, stirring halfway through.
- While the cauliflower is roasting, prepare the pizza dough. In a small bowl, combine warm water, active dry yeast, and maple syrup. Let it sit for 5 minutes until frothy.
- In a mixing bowl, combine whole wheat flour and a pinch of salt. Add the yeast mixture and knead until a smooth dough forms. Let it rest for 10 minutes.
- In another bowl, mix tahini, water, and lemon juice until smooth to create the tahini sauce.
- Once the dough has rested, roll it out on a floured surface into a 10-inch round shape.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Spread the tahini sauce evenly over the dough.
- Once the cauliflower is done roasting, distribute it evenly over the tahini-coated pizza base.
- Return the pizza to the oven and bake for an additional 15-20 minutes until the crust is golden and crispy.
- Remove from the oven, sprinkle with chopped parsley, slice, and serve warm.
