Ingredients

  • Whole Wheat Pasta - 200 grams
  • Carrots - 200 grams, grated
  • Raisins - 50 grams
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground Cumin - 1 teaspoon
  • Ground Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Parsley - 2 tablespoons, chopped
  • Lemon Juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Stir in the grated carrots, ground cumin, ground cinnamon, salt, and black pepper. Cook for about 5-7 minutes until the carrots are tender.
  5. Add the raisins to the skillet and continue to cook for an additional 2 minutes, allowing them to plump up.
  6. Once the pasta is done, drain it and add it to the skillet with the carrot and raisin mixture. Toss everything together until well combined.
  7. Remove from heat and stir in the fresh parsley and lemon juice before serving.
