- Whole Wheat Pasta - 200 grams
- Carrots - 200 grams, grated
- Raisins - 50 grams
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground Cumin - 1 teaspoon
- Ground Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Parsley - 2 tablespoons, chopped
- Lemon Juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Stir in the grated carrots, ground cumin, ground cinnamon, salt, and black pepper. Cook for about 5-7 minutes until the carrots are tender.
- Add the raisins to the skillet and continue to cook for an additional 2 minutes, allowing them to plump up.
- Once the pasta is done, drain it and add it to the skillet with the carrot and raisin mixture. Toss everything together until well combined.
- Remove from heat and stir in the fresh parsley and lemon juice before serving.
