Ingredients

  • Carrots - 200 grams, grated
  • Raisins - 50 grams
  • Chickpeas - 200 grams, cooked and mashed
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oats - 50 grams, ground into flour
  • Fresh coriander - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons (for frying)
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced

Steps

  1. In a large bowl, combine grated carrots, raisins, mashed chickpeas, chopped red onion, minced garlic, cumin powder, coriander powder, paprika, salt, black pepper, and fresh coriander.
  2. Mix all the ingredients until well combined. Gradually add ground oats until the mixture holds together but is not too dry.
  3. Form the mixture into two equal-sized patties.
  4. Heat olive oil in a pan over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side until golden brown and crispy.
  5. Toast the whole grain burger buns lightly in the same pan for about 1 minute.
  6. Assemble the burgers by placing the lettuce on the bottom bun, followed by the carrot and raisin patty, and top with sliced tomatoes.
  7. Serve immediately with your favorite condiments.
