Ingredients

  • Basmati rice - 150 grams
  • Carrots - 100 grams, diced
  • Green peas - 100 grams (fresh or frozen)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin, coriander, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
  4. Add the diced carrots and cook for another 5 minutes, stirring occasionally.
  5. Drain the soaked rice and add it to the saucepan along with the vegetable broth. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. Add the green peas in the last 5 minutes of cooking to heat through.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
