- Basmati rice - 150 grams
- Carrots - 100 grams, diced
- Green peas - 100 grams (fresh or frozen)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, coriander, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
- Add the diced carrots and cook for another 5 minutes, stirring occasionally.
- Drain the soaked rice and add it to the saucepan along with the vegetable broth. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Add the green peas in the last 5 minutes of cooking to heat through.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
