Ingredients
- Carrots - 300 grams, peeled and chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Fresh orange juice - 100 ml (about 1 large orange)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pot, cooking for an additional 1-2 minutes until fragrant.
- Stir in the chopped carrots, ground cumin, ground coriander, and cinnamon. Cook for another 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the carrots are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth.
- Stir in the fresh orange juice and season with salt and black pepper to taste.
- Serve the soup warm, garnished with fresh cilantro.
