Ingredients

  • Carrots - 300 grams, peeled and chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Fresh orange juice - 100 ml (about 1 large orange)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot, cooking for an additional 1-2 minutes until fragrant.
  3. Stir in the chopped carrots, ground cumin, ground coriander, and cinnamon. Cook for another 2 minutes, stirring frequently.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the carrots are tender.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth.
  6. Stir in the fresh orange juice and season with salt and black pepper to taste.
  7. Serve the soup warm, garnished with fresh cilantro.
