  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon (adjust to taste)
  • Black pepper - 1/4 teaspoon (adjust to taste)
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and ginger to the pot and cook for an additional 2 minutes until fragrant.
  3. Stir in the chopped carrots, cumin, cinnamon, salt, and black pepper, and cook for 5 more minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the carrots are tender.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, transfer to a blender in batches, being careful with the hot liquid.
  6. Stir in the lemon juice, adjust seasoning if necessary, and heat through for another 2 minutes.
  7. Serve hot, garnished with fresh cilantro.
