Ingredients

  • All-purpose flour - 150 grams

  • Water - 60 ml
  • Salt - 1/2 teaspoon
  • Red onions - 2 medium (about 250 grams)
  • Fresh figs - 100 grams (sliced)
  • Balsamic vinegar - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Fresh thyme - 1 teaspoon (chopped)
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the flour and salt. Add the olive oil and water, mixing until a dough forms. Knead briefly until smooth, then wrap in plastic wrap and refrigerate for 15 minutes.
  2. While the dough is chilling, slice the red onions. Heat a large skillet over medium heat, add a tablespoon of olive oil, and sauté the onions until they become caramelized, about 15-20 minutes. Stir occasionally to prevent burning.
  3. Add the balsamic vinegar, maple syrup, chopped thyme, and black pepper to the onions, cooking for an additional 5 minutes until the mixture is well combined and slightly thickened. Remove from heat.
  4. Preheat your oven to 200°C (400°F). Roll out the chilled dough on a lightly floured surface to fit a small tart pan (approximately 20 cm in diameter). Press the dough into the pan and trim any excess.
  5. Spread the caramelized onion mixture evenly over the crust, then arrange the sliced figs on top.
  6. Bake in the preheated oven for 20-25 minutes or until the crust is golden brown. Allow to cool slightly before slicing.
