  • Coriander - 1 teaspoon
  • Harissa - 1 teaspoon (optional for spice)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped for garnish
  • Lemon - 1, cut into wedges for serving

Steps

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced tomatoes and cook for about 5 minutes until they begin to break down.
