Ingredients

  • 2 medium-sized calamari (squid) bodies
  • 100 grams cooked quinoa
  • 50 grams cherry tomatoes, finely chopped
  • 30 grams red onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine the cooked quinoa, cherry tomatoes, red onion, garlic, parsley, cilantro, cumin, paprika, olive oil, salt, and pepper. Mix well to create the stuffing.
  3. Rinse the calamari under cold water and pat dry. Stuff each calamari body with the quinoa mixture, being careful not to overfill them.
  4. Place the stuffed calamari in a baking dish and drizzle with a little olive oil. Cover the dish with aluminum foil.
  5. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes to lightly brown the tops.
  6. Serve warm with lemon wedges on the side.
