- 2 medium-sized calamari (squid) bodies
- 100 grams cooked quinoa
- 50 grams cherry tomatoes, finely chopped
- 30 grams red onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lemon wedges for serving
Steps
- Preheat your oven to 180°C (350°F).
- In a bowl, combine the cooked quinoa, cherry tomatoes, red onion, garlic, parsley, cilantro, cumin, paprika, olive oil, salt, and pepper. Mix well to create the stuffing.
- Rinse the calamari under cold water and pat dry. Stuff each calamari body with the quinoa mixture, being careful not to overfill them.
- Place the stuffed calamari in a baking dish and drizzle with a little olive oil. Cover the dish with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5-10 minutes to lightly brown the tops.
- Serve warm with lemon wedges on the side.
