- Cabbage - 200 grams, chopped
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Tomato - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon (to taste)
- Black pepper - 1/4 teaspoon (to taste)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon - 1/2, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Add the diced carrot and potato to the pot, stirring frequently for another 5 minutes.
- Stir in the chopped cabbage, diced tomato, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for an additional 5 minutes until the cabbage starts to wilt.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the vegetables are tender.
- Remove from heat and stir in the lemon juice. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
