Ingredients

  • Cabbage - 200 grams, chopped
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Tomato - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon (to taste)
  • Black pepper - 1/4 teaspoon (to taste)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Lemon - 1/2, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  2. Add the diced carrot and potato to the pot, stirring frequently for another 5 minutes.
  3. Stir in the chopped cabbage, diced tomato, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for an additional 5 minutes until the cabbage starts to wilt.
  4. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the vegetables are tender.
  5. Remove from heat and stir in the lemon juice. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.
