Ingredients

  • White fish fillets (such as cod or haddock) - 200 grams
  • Shrimp, peeled and deveined - 100 grams
  • Olive oil - 2 tablespoons
  • Red onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Red bell pepper, diced - 1 medium
  • Tomatoes, diced - 2 medium
  • Cilantro, chopped - 2 tablespoons
  • Parsley, chopped - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Eggs - 4 large
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped red onion and sauté for 3-4 minutes until softened.
  2. Add minced garlic and diced red bell pepper to the skillet, cooking for another 2-3 minutes until the bell pepper is tender.
  3. Stir in the diced tomatoes, cumin, paprika, salt, and black pepper. Cook for about 5 minutes until the mixture is well combined and the tomatoes have released their juices.
  4. Add the white fish fillets and shrimp to the skillet. Cook for 5-7 minutes, gently stirring until the fish is opaque and the shrimp are pink and cooked through.
  5. In a bowl, whisk the eggs with lemon juice and chopped cilantro and parsley. Pour the egg mixture over the seafood in the skillet.
  6. Reduce the heat to low and cover the skillet. Cook for about 5 minutes, or until the eggs are set but still slightly soft.
  7. Remove from heat and let it sit for a couple of minutes. Serve warm, garnished with additional herbs if desired.
