- Bell pepper - 1 medium, diced
- Tomato - 1 large, diced
- Carrot - 1 medium, grated
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 100 ml
- Lemon - 1, juiced
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced bell pepper and grated carrot, cooking for another 5 minutes until softened.
- Mix in the diced tomato, cumin, paprika, turmeric, salt, and black pepper, cooking for another 3 minutes.
- Add the fish fillets to the skillet, gently pressing them into the vegetable mixture.
- Pour in the water and cover the skillet, allowing it to simmer for about 10-12 minutes until the fish is cooked through and flaky.
- Remove from heat and stir in the chopped cilantro and lemon juice.
- Serve hot, garnished with additional cilantro if desired.
