  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 large, diced
  • Carrot - 1 medium, grated
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 100 ml
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced bell pepper and grated carrot, cooking for another 5 minutes until softened.
  5. Mix in the diced tomato, cumin, paprika, turmeric, salt, and black pepper, cooking for another 3 minutes.
  6. Add the fish fillets to the skillet, gently pressing them into the vegetable mixture.
  7. Pour in the water and cover the skillet, allowing it to simmer for about 10-12 minutes until the fish is cooked through and flaky.
  8. Remove from heat and stir in the chopped cilantro and lemon juice.
  9. Serve hot, garnished with additional cilantro if desired.
