Ingredients

  • White fish fillet (e.g., cod or haddock) - 200 grams
  • Rice (uncooked) - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Phyllo pastry sheets - 4 sheets
  • Olive oil - for brushing

Steps

  1. Cook the rice according to package instructions and set aside to cool.
  2. In a pan over medium heat, add a splash of olive oil and sauté the onion until translucent, then add the minced garlic and cook for another minute.
  3. Add the fish fillet to the pan, breaking it up with a fork as it cooks. Mix in the cumin, paprika, salt, and pepper. Cook for about 5-7 minutes until the fish is cooked through.
  4. In a bowl, combine the cooked rice, sautéed fish mixture, chopped parsley, chopped cilantro, and lemon juice. Mix well and adjust seasoning if necessary.
  5. Preheat the oven to 200°C (400°F).
  6. Take one sheet of phyllo pastry, brush lightly with olive oil, and place another sheet on top. Cut the layered pastry into rectangles about 10x15 cm.
  7. Place a spoonful of the fish filling at one end of each rectangle, then fold the sides over the filling and roll it up tightly to form a small parcel. Repeat with remaining pastry and filling.
  8. Arrange the briouates on a baking sheet lined with parchment paper and brush the tops with olive oil.
  9. Bake in the preheated oven for about 20-25 minutes or until golden and crispy.
  10. Serve hot with a side of lemon wedges.
