Ingredients
- Fresh spinach - 200 grams
- Feta cheese - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Rice paper sheets - 6 sheets
- Olive oil - for frying
- Lemon juice - 1 tablespoon
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, cumin, paprika, salt, and black pepper to the skillet, cooking for another minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let the mixture cool slightly.
- Crumble the feta cheese into the spinach mixture and add lemon juice. Mix well until combined.
- Prepare the rice paper sheets by soaking them in warm water for about 10-15 seconds until pliable. Lay one sheet flat on a clean surface.
- Place 1-2 tablespoons of the spinach and feta mixture near one edge of the rice paper. Fold the sides in and roll tightly to enclose the filling. Repeat for the remaining sheets and filling.
- In a deep pan, heat olive oil over medium-high heat for frying. Once hot, carefully add the briouates to the oil, frying in batches until golden brown, about 2-3 minutes per side.
- Remove the briouates from the oil and let them drain on paper towels. Serve warm.
