Ingredients

  • Lentils (green or brown) - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Spring roll wrappers - 8 sheets
  • Egg - 1, for egg wash
  • Water - 1 tablespoon (for sealing)

Steps

  1. Rinse the lentils and cook them in boiling water for about 20 minutes or until tender. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent.
  3. Stir in the grated carrot, cooked lentils, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, mixing well. Remove from heat and stir in chopped cilantro.
  4. Allow the lentil mixture to cool slightly. Meanwhile, prepare your work surface with spring roll wrappers.
  5. Take one spring roll wrapper and place a heaping tablespoon of the lentil mixture in the center. Fold the bottom corner over the filling, then fold the sides in, and roll up tightly to form a triangle. Seal the edges with water.
  6. Repeat with the remaining wrappers and filling until all are filled.
  7. Preheat the oven to 200°C (400°F). Place the briouates on a baking sheet lined with parchment paper.
  8. Beat the egg and brush it over each briouate for a golden finish.
  9. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy. Serve warm.
