Ingredients
- Lentils (green or brown) - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Spring roll wrappers - 8 sheets
- Egg - 1, for egg wash
- Water - 1 tablespoon (for sealing)
Steps
- Rinse the lentils and cook them in boiling water for about 20 minutes or until tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent.
- Stir in the grated carrot, cooked lentils, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, mixing well. Remove from heat and stir in chopped cilantro.
- Allow the lentil mixture to cool slightly. Meanwhile, prepare your work surface with spring roll wrappers.
- Take one spring roll wrapper and place a heaping tablespoon of the lentil mixture in the center. Fold the bottom corner over the filling, then fold the sides in, and roll up tightly to form a triangle. Seal the edges with water.
- Repeat with the remaining wrappers and filling until all are filled.
- Preheat the oven to 200°C (400°F). Place the briouates on a baking sheet lined with parchment paper.
- Beat the egg and brush it over each briouate for a golden finish.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy. Serve warm.
