Ingredients

  • Phyllo dough - 6 sheets
  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Bell pepper (red) - 50 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for filling)
  • Vegetable oil - for frying

Steps

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the grated zucchini, grated carrot, and chopped bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  3. Stir in the chopped cilantro, cumin, cinnamon, salt, and pepper. Cook for an additional 2 minutes, then remove from heat and let the mixture cool.
  4. Lay down a sheet of phyllo dough and brush it lightly with vegetable oil. Place another sheet on top and brush again with oil.
  5. Cut the phyllo stack into strips about 10 cm wide. Place a tablespoon of the vegetable filling at one end of each strip.
  6. Fold the corner of the phyllo over the filling to form a triangle. Continue folding the triangle over itself along the strip until you reach the end. Seal the end with a bit of oil.
  7. Heat vegetable oil in a deep pan over medium heat. Fry the briouates in batches until they are golden brown on all sides, about 3-4 minutes per batch.
  8. Remove the briouates and place them on paper towels to drain excess oil. Serve warm.
