Ingredients
- Phyllo dough - 6 sheets
- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Bell pepper (red) - 50 grams, finely chopped
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for filling)
- Vegetable oil - for frying
Steps
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the grated zucchini, grated carrot, and chopped bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the chopped cilantro, cumin, cinnamon, salt, and pepper. Cook for an additional 2 minutes, then remove from heat and let the mixture cool.
- Lay down a sheet of phyllo dough and brush it lightly with vegetable oil. Place another sheet on top and brush again with oil.
- Cut the phyllo stack into strips about 10 cm wide. Place a tablespoon of the vegetable filling at one end of each strip.
- Fold the corner of the phyllo over the filling to form a triangle. Continue folding the triangle over itself along the strip until you reach the end. Seal the end with a bit of oil.
- Heat vegetable oil in a deep pan over medium heat. Fry the briouates in batches until they are golden brown on all sides, about 3-4 minutes per batch.
- Remove the briouates and place them on paper towels to drain excess oil. Serve warm.
