Ingredients

  • Warka pastry sheets - 4 sheets
  • Ground beef - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Egg - 1, beaten (for sealing)
  • Vegetable oil - for frying

Steps

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain any excess fat.
  3. Stir in the ground cumin, ground cinnamon, paprika, salt, black pepper, and chopped parsley. Cook for another 2 minutes, then remove from heat and let it cool slightly.
  4. Lay a warka sheet on a clean surface and cut it into half. Place a tablespoon of the filling at one end of the half-sheet and fold it into a triangle, sealing the edges with a little beaten egg.
  5. Continue folding the triangle over the filling until you reach the other end of the sheet, sealing with more beaten egg as needed. Repeat with the remaining sheets and filling.
  6. In a deep pan, heat vegetable oil over medium heat. Fry the briouates in batches until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the briouates and drain on paper towels. Serve warm with a dipping sauce or plain.
