Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Phyllo dough - 6 sheets
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Lemon juice - 1 tablespoon

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in the parsley, cilantro, cumin, paprika, salt, and black pepper. Remove from heat and let cool slightly.
  4. Once the shrimp mixture has cooled, lay one sheet of phyllo dough on a clean surface, brush lightly with olive oil, and place another sheet on top. Cut the stacked phyllo into 3 equal strips.
  5. Place a heaping tablespoon of the shrimp mixture at one end of each strip. Fold the sides over the filling and roll up to form a neat triangle shape. Continue folding until you reach the end of the strip, sealing with a bit of olive oil.
  6. Repeat the process with the remaining phyllo and shrimp mixture.
  7. In a large skillet, heat the remaining olive oil over medium heat. Fry the briouates in batches until golden brown on all sides, about 2-3 minutes per side.
  8. Remove from the skillet and place on paper towels to drain excess oil. Serve warm with a squeeze of lemon juice.
