Ingredients
- Shrimp - 200 grams, peeled and deveined
- Phyllo dough - 6 sheets
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Lemon juice - 1 tablespoon
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in the parsley, cilantro, cumin, paprika, salt, and black pepper. Remove from heat and let cool slightly.
- Once the shrimp mixture has cooled, lay one sheet of phyllo dough on a clean surface, brush lightly with olive oil, and place another sheet on top. Cut the stacked phyllo into 3 equal strips.
- Place a heaping tablespoon of the shrimp mixture at one end of each strip. Fold the sides over the filling and roll up to form a neat triangle shape. Continue folding until you reach the end of the strip, sealing with a bit of olive oil.
- Repeat the process with the remaining phyllo and shrimp mixture.
- In a large skillet, heat the remaining olive oil over medium heat. Fry the briouates in batches until golden brown on all sides, about 2-3 minutes per side.
- Remove from the skillet and place on paper towels to drain excess oil. Serve warm with a squeeze of lemon juice.
