Ingredients

  • Canned tuna - 200 grams, drained
  • Onion - 1 medium, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Phyllo pastry sheets - 6 sheets
  • Butter - 50 grams, melted
  • Vegetable oil - for frying

Steps

  1. In a pan over medium heat, add a tablespoon of melted butter and sauté the chopped onion until translucent.
  2. In a mixing bowl, combine the drained tuna, sautéed onion, parsley, cilantro, paprika, cumin, salt, pepper, and lemon juice. Mix well until all ingredients are fully integrated.
  3. Lay one sheet of phyllo pastry on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush again.
  4. Cut the layered phyllo sheets into 3 equal strips lengthwise.
  5. Spoon a tablespoon of the tuna mixture at one end of each strip. Fold the pastry over the filling to form a triangle, then continue folding the triangle along the strip until you reach the end. Seal the edge with a little melted butter.
  6. Repeat the process until all filling is used.
  7. In a deep frying pan, heat vegetable oil over medium-high heat. Once hot, carefully add the briouates in batches and fry until golden brown on all sides, about 3-4 minutes.
  8. Remove the fried briouates and drain them on paper towels to remove excess oil. Serve warm.
