Ingredients

  • Gluten-free phyllo dough - 6 sheets
  • Chicken breast - 200 grams, cooked and shredded
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Egg - 1, beaten (for sealing)
  • Sesame seeds - 1 tablespoon (optional, for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, cinnamon, paprika, salt, and pepper. Cook for another minute until fragrant.
  4. Stir in the shredded chicken and chopped parsley, mixing well. Remove from heat and let the filling cool.
  5. Lay one sheet of gluten-free phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again with oil.
  6. Cut the layered phyllo dough into strips, approximately 10 cm wide.
  7. Place a tablespoon of the chicken filling at one end of each strip. Fold the sides over the filling and roll it up to form a triangle shape, sealing the edges with the beaten egg.
  8. Repeat the process with the remaining dough and filling.
  9. Place the briouates on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with sesame seeds if desired.
  10. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
