Ingredients

  • Phyllo pastry - 6 sheets
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Fresh parsley - 2 tablespoons, finely chopped
  • Ground cumin - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for brushing)
  • Vegetable oil - for frying

Steps

  1. In a bowl, mix the crumbled feta cheese, ricotta cheese, chopped parsley, ground cumin, black pepper, and salt until well combined.
  2. Take one sheet of phyllo pastry and place it on a clean surface. Brush lightly with olive oil.
  3. Fold the phyllo sheet in half lengthwise to create a rectangle.
  4. Place a spoonful of the cheese mixture at one end of the phyllo rectangle.
  5. Fold the pastry over the filling to form a triangle, then continue folding in a triangle shape until you reach the end of the pastry. Seal the edges with a bit of olive oil.
  6. Repeat this process with the remaining phyllo sheets and filling.
  7. In a large frying pan, heat vegetable oil over medium heat.
  8. Once the oil is hot, carefully add the briouates in batches, frying until they are golden brown and crispy, about 3-4 minutes per side.
  9. Remove from the oil and drain on paper towels. Serve warm.
