- Phyllo pastry - 6 sheets
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Fresh parsley - 2 tablespoons, finely chopped
- Ground cumin - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 2 tablespoons (for brushing)
- Vegetable oil - for frying
Steps
- In a bowl, mix the crumbled feta cheese, ricotta cheese, chopped parsley, ground cumin, black pepper, and salt until well combined.
- Take one sheet of phyllo pastry and place it on a clean surface. Brush lightly with olive oil.
- Fold the phyllo sheet in half lengthwise to create a rectangle.
- Place a spoonful of the cheese mixture at one end of the phyllo rectangle.
- Fold the pastry over the filling to form a triangle, then continue folding in a triangle shape until you reach the end of the pastry. Seal the edges with a bit of olive oil.
- Repeat this process with the remaining phyllo sheets and filling.
- In a large frying pan, heat vegetable oil over medium heat.
- Once the oil is hot, carefully add the briouates in batches, frying until they are golden brown and crispy, about 3-4 minutes per side.
- Remove from the oil and drain on paper towels. Serve warm.
