Ingredients
- Warka pastry sheets - 4
- Olive oil - 2 tablespoons
- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, sauté until softened, about 3 minutes.
- Add the grated zucchini, carrot, and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, ground cinnamon, salt, black pepper, and chopped parsley. If using feta cheese, add it now. Mix well and cook for an additional 2 minutes. Remove from heat and let the mixture cool slightly.
- Lay a warka pastry sheet on a clean surface. Brush with a little olive oil. Place a tablespoon of the vegetable filling near one edge of the sheet. Fold the sides over the filling and roll it up tightly to form a small cylinder. Seal the edges with a little water if necessary.
- Repeat the process with the remaining pastry sheets and filling.
- In a deep frying pan, heat enough olive oil to submerge the briouates over medium heat. Once hot, carefully add the briouates in batches, frying until golden brown and crispy, about 3-4 minutes per side.
- Remove the briouates and drain on paper towels. Sprinkle with sesame seeds before serving.
