Ingredients

  • Warka pastry sheets - 4
  • Olive oil - 2 tablespoons
  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, sauté until softened, about 3 minutes.
  2. Add the grated zucchini, carrot, and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  3. Stir in the ground cumin, ground cinnamon, salt, black pepper, and chopped parsley. If using feta cheese, add it now. Mix well and cook for an additional 2 minutes. Remove from heat and let the mixture cool slightly.
  4. Lay a warka pastry sheet on a clean surface. Brush with a little olive oil. Place a tablespoon of the vegetable filling near one edge of the sheet. Fold the sides over the filling and roll it up tightly to form a small cylinder. Seal the edges with a little water if necessary.
  5. Repeat the process with the remaining pastry sheets and filling.
  6. In a deep frying pan, heat enough olive oil to submerge the briouates over medium heat. Once hot, carefully add the briouates in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the briouates and drain on paper towels. Sprinkle with sesame seeds before serving.
