Ingredients

  • Warka pastry or spring roll wrappers - 4 sheets
  • Zucchini - 100 grams, finely chopped
  • Carrot - 100 grams, grated
  • Bell pepper - 100 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  2. Add the zucchini, carrot, and bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  3. Stir in the cumin, paprika, salt, black pepper, parsley, and lemon juice. Cook for another 2 minutes and then remove from heat.
  4. Lay out a sheet of warka pastry or spring roll wrapper on a flat surface. Place 2-3 tablespoons of the vegetable mixture near one edge of the wrapper.
  5. Fold the sides of the wrapper over the filling and then roll it up tightly to form a cylinder. Seal the edges with a little water.
  6. Repeat with the remaining wrappers and filling.
  7. Heat a non-stick skillet over medium heat. Place the briouates seam side down and cook for about 3-4 minutes on each side until golden brown and crispy.
  8. Serve hot with a side of fresh salad or yogurt dip.
