Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Phyllo dough - 6 sheets
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons, for cooking
  • Butter - 30 grams, melted, for brushing

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the shrimp to the skillet, along with paprika, cumin, salt, and black pepper. Cook until the shrimp turn pink, about 3-4 minutes.
  3. Remove from heat and stir in the chopped cilantro and lemon juice. Let the filling cool slightly.
  4. Lay one sheet of phyllo dough on a clean surface and brush lightly with melted butter. Place another sheet on top and brush again with butter.
  5. Cut the layered phyllo dough into strips approximately 10 cm wide.
  6. Place a tablespoon of the shrimp filling at one end of a strip. Fold the corner of the strip over the filling to form a triangle, then continue folding in a triangle shape until you reach the end of the strip. Seal the edges with a little melted butter.
  7. Repeat the process with the remaining phyllo sheets and filling.
  8. In a large skillet, heat the remaining olive oil over medium heat. Fry the briouates in batches until golden and crispy, about 2-3 minutes per side.
  9. Remove from the skillet and drain on paper towels. Serve hot.
