Ingredients

  • Almonds - 150 grams
  • Sugar - 75 grams
  • Cinnamon - 1 teaspoon
  • Orange blossom water - 2 tablespoons
  • Butter - 30 grams, melted
  • Warka or spring roll pastry - 8 sheets
  • Oil - for frying
  • Honey - for drizzling

Steps

  1. In a food processor, blend the almonds until finely ground, then add the sugar, cinnamon, and orange blossom water. Mix until well combined.
  2. Take one sheet of warka or spring roll pastry and cut it into strips about 10 cm wide.
  3. Place a tablespoon of the almond mixture at one end of the strip and fold the edges over to create a triangle. Continue folding in a triangular shape until you reach the end of the strip. Seal the end with a bit of melted butter.
  4. Repeat the process with the remaining pastry sheets and almond filling.
  5. Heat oil in a deep frying pan over medium heat. Fry the briouates in batches until golden brown and crispy, about 2-3 minutes on each side.
  6. Remove them from the oil and drain on paper towels. Drizzle with honey before serving.
