Ingredients

  • Chicken breast - 200 grams, cooked and shredded
  • Rice flour - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Egg - 1, beaten
  • Olive oil - for frying
  • Lemon juice - 1 tablespoon

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
  2. Add minced garlic, shredded chicken, cilantro, parsley, cinnamon, cumin, paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally.
  3. Remove from heat and let the mixture cool slightly. Stir in the beaten egg and lemon juice to bind the filling.
  4. Prepare a work surface and place a small amount of rice flour mixed with water to form a dough. Roll out into thin sheets.
  5. Cut the dough into squares, approximately 10x10 cm in size. Place a spoonful of the filling in the center of each square.
  6. Fold the dough over the filling to form a triangle, sealing the edges with a bit of water to prevent them from opening during frying.
  7. In a deep pan, heat olive oil over medium-high heat. Fry the briouates in batches until golden brown and crispy on both sides, about 3-4 minutes per side.
  8. Remove from the oil and drain on paper towels. Serve hot with a side of lemon wedges.
