Ingredients

  • Gluten-free phyllo dough - 6 sheets
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1, beaten (for sealing)
  • Olive oil - for frying

Steps

  1. In a bowl, mix the crumbled feta, ricotta, chopped parsley, cumin, black pepper, and salt until well combined.
  2. Lay out one sheet of gluten-free phyllo dough on a clean surface and brush lightly with olive oil. Repeat this process with a second sheet, stacking them.
  3. Cut the stacked sheets into 3 equal strips.
  4. Place a tablespoon of the cheese mixture at one end of each strip and fold the sides over the filling, then roll tightly to form a triangle shape. Seal the edges with beaten egg.
  5. Heat olive oil in a frying pan over medium heat. Fry the briouates for about 3-4 minutes on each side until golden brown.
  6. Remove from the pan and place on paper towels to drain excess oil. Serve warm.
