Ingredients

  • Phyllo pastry - 6 sheets
  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams, crumbled
  • Cooked chickpeas - 100 grams, mashed
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until soft and translucent.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the wilted spinach, crumbled feta cheese, mashed chickpeas, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly combined.
  5. Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again with oil.
  6. Cut the layered phyllo into strips, about 10 cm wide. Place a spoonful of the spinach mixture at one end of each strip.
  7. Fold the phyllo over the filling to create a triangle, then continue folding the triangle along the strip until you reach the end. Seal the edges with a little olive oil.
  8. Place the briouats on a baking sheet lined with parchment paper. Brush the tops with remaining olive oil and sprinkle with sesame seeds.
  9. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  10. Remove from the oven and let cool slightly before serving.
