Ingredients

  • Phyllo pastry - 4 sheets
  • Olive oil - 3 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100 grams, cooked
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the red onion until translucent, about 3-4 minutes.
  3. Add the garlic, red bell pepper, and zucchini to the skillet and continue to cook for another 5 minutes until the vegetables are tender.
  4. Stir in the ground cumin, paprika, cinnamon, salt, and black pepper, and cook for 1-2 minutes until fragrant.
  5. Remove from heat and fold in the cooked chickpeas, crumbled feta cheese, and chopped parsley. Allow the mixture to cool slightly.
  6. Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat for a total of 4 sheets.
  7. Cut the layered phyllo into squares (approximately 10x10 cm).
  8. Place a spoonful of the vegetable mixture in the center of each square, fold the corners over to create a triangle, and seal the edges with a fork.
  9. Arrange the briouat on a baking sheet lined with parchment paper, brush the tops with beaten egg, and bake for 20-25 minutes or until golden brown.
  10. Remove from the oven, let cool slightly, and serve warm.
