Ingredients
- Phyllo pastry - 4 sheets
- Olive oil - 3 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams, cooked
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 200°C (390°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the red onion until translucent, about 3-4 minutes.
- Add the garlic, red bell pepper, and zucchini to the skillet and continue to cook for another 5 minutes until the vegetables are tender.
- Stir in the ground cumin, paprika, cinnamon, salt, and black pepper, and cook for 1-2 minutes until fragrant.
- Remove from heat and fold in the cooked chickpeas, crumbled feta cheese, and chopped parsley. Allow the mixture to cool slightly.
- Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with oil again. Repeat for a total of 4 sheets.
- Cut the layered phyllo into squares (approximately 10x10 cm).
- Place a spoonful of the vegetable mixture in the center of each square, fold the corners over to create a triangle, and seal the edges with a fork.
- Arrange the briouat on a baking sheet lined with parchment paper, brush the tops with beaten egg, and bake for 20-25 minutes or until golden brown.
- Remove from the oven, let cool slightly, and serve warm.
