Ingredients

  • olive oil - 2 tablespoons
  • onion - 1 medium, chopped
  • garlic - 2 cloves, minced
  • ground lamb - 200 grams
  • cooked chickpeas - 100 grams
  • carrot - 1 medium, diced
  • celery - 1 stick, diced
  • cumin - 1 teaspoon
  • cinnamon - 1/2 teaspoon
  • paprika - 1 teaspoon
  • chicken broth - 500 ml
  • water - 250 ml
  • fresh parsley - 2 tablespoons, chopped
  • salt - to taste
  • black pepper - to taste
  • briouat pastries - 4 pieces

Steps

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened, about 5 minutes.
  2. Add the ground lamb and cook until browned, breaking it apart with a spoon, about 8 minutes.
  3. Stir in the diced carrot and celery, cooking for an additional 5 minutes.
  4. Add the cooked chickpeas, cumin, cinnamon, paprika, chicken broth, and water. Season with salt and black pepper to taste. Bring to a boil.
  5. Reduce the heat and let the soup simmer for 15-20 minutes, allowing the flavors to meld.
  6. While the soup simmers, prepare the briouat pastries according to package instructions, baking or frying until golden and crispy.
  7. Once the soup is ready, stir in the chopped parsley. Serve hot, garnishing each bowl with a crispy briouat on the side.
