- olive oil - 2 tablespoons
- onion - 1 medium, chopped
- garlic - 2 cloves, minced
- ground lamb - 200 grams
- cooked chickpeas - 100 grams
- carrot - 1 medium, diced
- celery - 1 stick, diced
- cumin - 1 teaspoon
- cinnamon - 1/2 teaspoon
- paprika - 1 teaspoon
- chicken broth - 500 ml
- water - 250 ml
- fresh parsley - 2 tablespoons, chopped
- salt - to taste
- black pepper - to taste
- briouat pastries - 4 pieces
Steps
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened, about 5 minutes.
- Add the ground lamb and cook until browned, breaking it apart with a spoon, about 8 minutes.
- Stir in the diced carrot and celery, cooking for an additional 5 minutes.
- Add the cooked chickpeas, cumin, cinnamon, paprika, chicken broth, and water. Season with salt and black pepper to taste. Bring to a boil.
- Reduce the heat and let the soup simmer for 15-20 minutes, allowing the flavors to meld.
- While the soup simmers, prepare the briouat pastries according to package instructions, baking or frying until golden and crispy.
- Once the soup is ready, stir in the chopped parsley. Serve hot, garnishing each bowl with a crispy briouat on the side.
