Ingredients

  • Whole wheat pastry dough - 200 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Red onion - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpeas - 100 grams, cooked
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Mozzarella cheese - 50 grams, shredded
  • Tomato sauce - 100 grams

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the red onion and garlic until translucent.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking until tender, about 5-7 minutes.
  4. Stir in the cooked chickpeas, cumin, paprika, salt, black pepper, and fresh parsley. Cook for another 2 minutes and remove from heat.
  5. Roll out the whole wheat pastry dough on a lightly floured surface and cut it into 4 equal squares.
  6. Spread a tablespoon of tomato sauce on each square, leaving a border around the edges.
  7. Spoon the vegetable and chickpea mixture onto half of each square, then sprinkle feta and mozzarella cheese on top.
  8. Fold the other half of the pastry over the filling to create a pocket and seal the edges by pressing with a fork.
  9. Brush the tops of the briouats with the remaining olive oil.
  10. Place the briouats on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
  11. Remove from the oven and let cool for a few minutes before serving.
