Ingredients
- Whole wheat pastry dough - 200 grams
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Red onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Chickpeas - 100 grams, cooked
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Mozzarella cheese - 50 grams, shredded
- Tomato sauce - 100 grams
Steps
- Preheat the oven to 200°C (390°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the red onion and garlic until translucent.
- Add the diced red bell pepper and zucchini to the skillet, cooking until tender, about 5-7 minutes.
- Stir in the cooked chickpeas, cumin, paprika, salt, black pepper, and fresh parsley. Cook for another 2 minutes and remove from heat.
- Roll out the whole wheat pastry dough on a lightly floured surface and cut it into 4 equal squares.
- Spread a tablespoon of tomato sauce on each square, leaving a border around the edges.
- Spoon the vegetable and chickpea mixture onto half of each square, then sprinkle feta and mozzarella cheese on top.
- Fold the other half of the pastry over the filling to create a pocket and seal the edges by pressing with a fork.
- Brush the tops of the briouats with the remaining olive oil.
- Place the briouats on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
