Ingredients

  • Warka pastry sheets - 4
  • Jben cheese (or ricotta) - 150 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh mint, chopped - 1 tablespoon
  • Garlic, minced - 1 clove
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for brushing
  • Water - for sealing

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the Jben cheese, chopped parsley, chopped mint, minced garlic, cumin, salt, and black pepper until well mixed.
  3. Take a warka sheet and cut it into halves lengthwise to create long strips.
  4. Place a tablespoon of the cheese mixture at one end of a strip, fold the sides in, and roll it up to form a triangle. Seal the edges with a little water.
  5. Repeat the process with the remaining sheets and filling.
  6. Place the filled briouats on a baking tray lined with parchment paper, brush them lightly with olive oil.
  7. Bake in the preheated oven for 15-20 minutes, or until they are golden brown and crispy.
  8. Remove from the oven, let cool slightly, and serve warm.
