Ingredients
- Warka pastry sheets - 4
- Jben cheese (or ricotta) - 150 grams
- Fresh parsley, chopped - 2 tablespoons
- Fresh mint, chopped - 1 tablespoon
- Garlic, minced - 1 clove
- Cumin powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for brushing
- Water - for sealing
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the Jben cheese, chopped parsley, chopped mint, minced garlic, cumin, salt, and black pepper until well mixed.
- Take a warka sheet and cut it into halves lengthwise to create long strips.
- Place a tablespoon of the cheese mixture at one end of a strip, fold the sides in, and roll it up to form a triangle. Seal the edges with a little water.
- Repeat the process with the remaining sheets and filling.
- Place the filled briouats on a baking tray lined with parchment paper, brush them lightly with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until they are golden brown and crispy.
- Remove from the oven, let cool slightly, and serve warm.
