Ingredients

  • Chicken breast, diced - 200 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Ground cinnamon - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Phyllo pastry sheets - 6 sheets
  • Egg, beaten - 1 large
  • Sesame seeds - 1 tablespoon

Steps

  1. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent.
  2. Add the diced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the parsley, cilantro, cinnamon, cumin, ginger, salt, and pepper, and cook for an additional 2 minutes. Remove from heat and let the mixture cool slightly.
  4. Preheat your oven to 180°C (350°F).
  5. Lay out one sheet of phyllo pastry on a clean surface and brush it lightly with beaten egg. Place another sheet on top and brush again.
  6. Cut the layered phyllo sheets into strips about 10 cm wide.
  7. Take one strip, place a tablespoon of the chicken mixture at one end, and fold the sides over to create a parcel. Roll it up tightly, sealing the edges with a little beaten egg.
  8. Repeat until all chicken filling is used. Place the briouats on a baking tray lined with parchment paper.
  9. Brush the tops with more beaten egg and sprinkle sesame seeds over them.
  10. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
