Ingredients
- Fresh spinach - 200 grams
- Feta cheese - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Warka or spring roll pastry sheets - 8 sheets
- Egg - 1, beaten (for sealing)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a large pan, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- Once cooled, crumble the feta cheese into the spinach mixture and add ground cumin, ground coriander, salt, and pepper. Mix well to combine.
- Lay out one sheet of warka or spring roll pastry on a clean surface. Brush lightly with oil and place a spoonful of the spinach mixture near one edge.
- Fold the pastry over the filling to create a triangle shape. Continue folding the triangle over itself until you reach the end of the pastry. Seal the edge with a little beaten egg.
- Repeat the process with the remaining pastry sheets and filling.
- Heat a generous amount of oil in a frying pan over medium heat. Fry the briouats in batches until golden brown and crispy, about 2-3 minutes on each side.
- Remove from the pan and drain on paper towels. Sprinkle with sesame seeds before serving.
