Ingredients

  • Fresh spinach - 200 grams
  • Feta cheese - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Warka or spring roll pastry sheets - 8 sheets
  • Egg - 1, beaten (for sealing)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a large pan, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. Once cooled, crumble the feta cheese into the spinach mixture and add ground cumin, ground coriander, salt, and pepper. Mix well to combine.
  5. Lay out one sheet of warka or spring roll pastry on a clean surface. Brush lightly with oil and place a spoonful of the spinach mixture near one edge.
  6. Fold the pastry over the filling to create a triangle shape. Continue folding the triangle over itself until you reach the end of the pastry. Seal the edge with a little beaten egg.
  7. Repeat the process with the remaining pastry sheets and filling.
  8. Heat a generous amount of oil in a frying pan over medium heat. Fry the briouats in batches until golden brown and crispy, about 2-3 minutes on each side.
  9. Remove from the pan and drain on paper towels. Sprinkle with sesame seeds before serving.
