- Phyllo dough - 4 sheets
- Green olives, pitted and chopped - 100 grams
- Feta cheese, crumbled - 50 grams
- Fresh parsley, chopped - 2 tablespoons
- Garlic, minced - 1 clove
- Cumin powder - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the chopped olives, crumbled feta cheese, parsley, minced garlic, cumin, paprika, salt, and black pepper. Mix well until all ingredients are combined.
- Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush with oil again.
- Cut the layered phyllo dough into strips, about 10 cm wide.
- Spoon a tablespoon of the olive mixture at one end of each strip. Fold the sides over the filling and roll it up tightly to form a triangle, sealing the ends with a little olive oil.
- Place the briouats on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with sesame seeds.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
