Ingredients

  • Phyllo dough - 4 sheets
  • Green olives, pitted and chopped - 100 grams
  • Feta cheese, crumbled - 50 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Garlic, minced - 1 clove
  • Cumin powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the chopped olives, crumbled feta cheese, parsley, minced garlic, cumin, paprika, salt, and black pepper. Mix well until all ingredients are combined.
  3. Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush with oil again.
  4. Cut the layered phyllo dough into strips, about 10 cm wide.
  5. Spoon a tablespoon of the olive mixture at one end of each strip. Fold the sides over the filling and roll it up tightly to form a triangle, sealing the ends with a little olive oil.
  6. Place the briouats on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with sesame seeds.
  7. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.
