Ingredients

  • Wonton wrappers - 10 sheets
  • Eggs - 4 large
  • Onion - 1 medium, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  2. In a bowl, whisk together the eggs, parsley, cumin, paprika, salt, and black pepper. Pour the mixture into the skillet with the onions, and cook until the eggs are just set, stirring occasionally, about 3-4 minutes.
  3. Remove the skillet from heat and let the egg mixture cool slightly.
  4. Take a wonton wrapper and place 1 tablespoon of the egg mixture in the center. Fold the wrapper diagonally to form a triangle, sealing the edges with a little water. Repeat with the remaining wrappers and filling.
  5. In a clean skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the briouats in batches until golden brown and crispy, about 2-3 minutes on each side.
  6. If desired, sprinkle sesame seeds on top during the last minute of frying for extra crunch.
  7. Serve warm with a side of fresh salad or yogurt.
