Ingredients
- Lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Spring roll wrappers - 6 sheets
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the lentils under cold water and cook them in a pot with 300 ml of water for about 20 minutes, or until tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Stir in the cooked lentils, cumin, coriander, paprika, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld. Remove from heat and stir in the chopped parsley.
- Lay out a spring roll wrapper on a clean surface and add a tablespoon of the lentil mixture near one end. Fold the sides over and roll tightly into a cigar shape. Repeat with the remaining wrappers and filling.
- Preheat the oven to 200°C (400°F). Place the briouats on a baking sheet lined with parchment paper and brush lightly with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy. Garnish with sesame seeds before serving.
