Ingredients

  • Lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Spring roll wrappers - 6 sheets
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the lentils under cold water and cook them in a pot with 300 ml of water for about 20 minutes, or until tender. Drain and set aside.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Stir in the cooked lentils, cumin, coriander, paprika, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld. Remove from heat and stir in the chopped parsley.
  5. Lay out a spring roll wrapper on a clean surface and add a tablespoon of the lentil mixture near one end. Fold the sides over and roll tightly into a cigar shape. Repeat with the remaining wrappers and filling.
  6. Preheat the oven to 200°C (400°F). Place the briouats on a baking sheet lined with parchment paper and brush lightly with olive oil.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy. Garnish with sesame seeds before serving.
