Ingredients

  • Filo dough - 6 sheets
  • Olive oil - 3 tablespoons
  • Zucchini - 100 grams, finely chopped
  • Carrot - 100 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  3. Add the zucchini, carrot, and red bell pepper to the pan. Cook for about 5-7 minutes, until the vegetables are tender.
  4. Stir in the cumin, cinnamon, salt, black pepper, parsley, and cilantro. Cook for another 2 minutes, then remove from heat and let cool slightly.
  5. Lay out a sheet of filo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush it again with oil.
  6. Cut the layered filo dough into long strips (approximately 10 cm wide).
  7. At the bottom of each strip, place a tablespoon of the vegetable filling. Fold the sides over the filling, then roll it up tightly to form a small cylindrical shape.
  8. Place the briouats seam-side down on a baking sheet lined with parchment paper. Brush the tops with olive oil.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  10. Remove from the oven and let cool slightly before serving.
