Ingredients
- Filo dough - 6 sheets
- Olive oil - 3 tablespoons
- Zucchini - 100 grams, finely chopped
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the zucchini, carrot, and red bell pepper to the pan. Cook for about 5-7 minutes, until the vegetables are tender.
- Stir in the cumin, cinnamon, salt, black pepper, parsley, and cilantro. Cook for another 2 minutes, then remove from heat and let cool slightly.
- Lay out a sheet of filo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush it again with oil.
- Cut the layered filo dough into long strips (approximately 10 cm wide).
- At the bottom of each strip, place a tablespoon of the vegetable filling. Fold the sides over the filling, then roll it up tightly to form a small cylindrical shape.
- Place the briouats seam-side down on a baking sheet lined with parchment paper. Brush the tops with olive oil.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
