Ingredients
- Rice paper sheets - 6
- Zucchini - 100g, grated
- Carrot - 100g, grated
- Red bell pepper - 50g, finely diced
- Onion - 50g, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 tsp
- Cinnamon - 1/2 tsp
- Paprika - 1 tsp
- Olive oil - 2 tbsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Fresh parsley - 2 tbsp, chopped
- Lemon juice - 1 tbsp
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
- Add the grated zucchini, carrot, and diced red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the cumin, cinnamon, paprika, salt, black pepper, and chopped parsley. Sauté for an additional 2 minutes, then remove from heat. Add lemon juice and mix well. Allow the filling to cool slightly.
- Prepare a clean working surface and fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until softened, then lay it flat on the surface.
- Place 2 tablespoons of the vegetable filling near the bottom of the rice paper. Fold the sides over the filling and roll tightly from the bottom up. Repeat this process with the remaining rice paper sheets and filling.
- In the same skillet, add the remaining tablespoon of olive oil over medium heat. Once hot, carefully place the filled briouats seam side down and fry until golden brown and crispy, about 3-4 minutes per side.
- Remove from the skillet and place on paper towels to drain any excess oil. Serve warm with a side of dipping sauce or salad.
