- Fava beans - 200 grams (cooked and peeled)
- Almond flour - 100 grams
- Cilantro - 30 grams (chopped)
- Onion - 1 small (finely chopped)
- Garlic - 1 clove (minced)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Egg - 1 (beaten, for sealing)
- Coconut oil - for frying
Steps
- In a mixing bowl, mash the cooked fava beans until smooth. Add the almond flour, chopped cilantro, onion, garlic, cumin, paprika, salt, and pepper. Mix well to combine.
- Take a small amount of the fava bean mixture and form it into a small log or filling. Set aside.
- Lay out a sheet of parchment paper or a clean surface. Take a small piece of almond flour dough and flatten it into a thin circle (about 10 cm in diameter).
- Place the fava bean filling in the center of the almond flour circle. Fold the edges over to create a triangle shape and seal the edges using the beaten egg.
- Heat coconut oil in a frying pan over medium heat. Once hot, carefully place the filled briouats in the pan and fry until golden brown and crispy on both sides, about 3-4 minutes per side.
- Remove from the pan and place on a paper towel to drain excess oil. Serve warm.
