Ingredients

  • Carrots - 200 grams, grated
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Chili powder - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Warka pastry (or spring roll wrappers) - 4 sheets
  • Sesame seeds - 1 tablespoon, toasted
  • Honey - 1 tablespoon (for drizzling)

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Stir in the grated carrots, cumin, cinnamon, chili powder, salt, and black pepper. Cook for about 5-7 minutes, until the carrots soften.
  3. Remove from heat and mix in the chopped parsley and toasted sesame seeds. Let the filling cool slightly.
  4. Lay out a sheet of warka pastry on a clean surface. Cut it in half lengthwise to create two strips.
  5. Place a tablespoon of the carrot filling at one end of the strip and fold it over to form a triangle. Continue folding the triangle along the strip until you reach the end, sealing the edges with a bit of water.
  6. Repeat the process with the remaining pastry sheets and filling.
  7. Heat oil in a deep pan over medium heat. Fry the briouats in batches until golden brown and crispy, about 3-4 minutes per side.
  8. Remove from oil and drain on paper towels. Drizzle with honey before serving.
