- Erythritol (or preferred low-carb sweetener) - 30 grams
- Cinnamon - 1 teaspoon
- Egg - 1 large
- Butter (melted) - 30 grams
- Vanilla extract - 1 teaspoon
- Rice paper sheets - 4
Steps
- In a mixing bowl, combine the almond flour, finely chopped almonds, erythritol, and cinnamon.
- In another bowl, whisk together the egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients, mixing until a sticky dough forms.
- Soak rice paper sheets in warm water for about 10 seconds until flexible.
- Place a spoonful of the almond mixture onto the lower third of each rice paper sheet and fold the sides over the filling.
- Roll the rice paper from the bottom up to form a tight cylinder, sealing the edges.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Cook the briouats in the skillet for about 3-4 minutes on each side until golden brown and crispy.
- Remove them from the skillet and let them cool slightly before serving.
