Ingredients

  • Almond flour - 100 grams
  • Almonds (finely chopped) - 50 grams
  • Erythritol (or preferred low-carb sweetener) - 30 grams
  • Cinnamon - 1 teaspoon
  • Egg - 1 large
  • Butter (melted) - 30 grams
  • Vanilla extract - 1 teaspoon
  • Rice paper sheets - 4

Steps

  1. In a mixing bowl, combine the almond flour, finely chopped almonds, erythritol, and cinnamon.
  2. In another bowl, whisk together the egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients, mixing until a sticky dough forms.
  4. Soak rice paper sheets in warm water for about 10 seconds until flexible.
  5. Place a spoonful of the almond mixture onto the lower third of each rice paper sheet and fold the sides over the filling.
  6. Roll the rice paper from the bottom up to form a tight cylinder, sealing the edges.
  7. Heat a non-stick skillet over medium heat and add a small amount of butter.
  8. Cook the briouats in the skillet for about 3-4 minutes on each side until golden brown and crispy.
  9. Remove them from the skillet and let them cool slightly before serving.
