Briouat aux amandes is a delightful Moroccan pastry filled with a sweet almond mixture, wrapped in crispy pastry and lightly fried to golden perfection. This vegan version maintains all the traditional flavors while being completely plant-based.

- Almond flour - 100 grams
- Powdered sugar - 50 grams
- Cinnamon - 1 teaspoon
- Orange blossom water - 2 tablespoons
- Vegan butter - 30 grams, melted
- Rice paper sheets - 4 sheets
- Oil for frying - 200 ml
- Sesame seeds - 2 tablespoons (for garnish)
Steps
- In a mixing bowl, combine almond flour, powdered sugar, cinnamon, and melted vegan butter.
- Add the orange blossom water to the mixture and stir until it forms a thick paste.
- Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10 seconds until soft.
- Place the softened rice paper on a clean surface and add about 1 tablespoon of the almond mixture at one end.
- Fold the sides over the filling and roll it tightly to form a small cigar shape. Repeat this process with the remaining sheets and filling.
- In a frying pan, heat the oil over medium heat. Once hot, carefully place the briouats in the oil, frying until golden brown on all sides, about 2-3 minutes per side.
- Remove the briouats from the oil and place them on paper towels to absorb excess oil. Sprinkle sesame seeds on top while still warm.
- Serve warm as a snack or dessert.
