- White fish fillets - 200 grams (like cod or haddock)

- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Warka or spring roll pastry sheets - 4 sheets
- Egg - 1, beaten (for sealing)
- Vegetable oil - for frying
Steps
- In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the fish fillets to the pan, breaking them into small pieces as they cook. Season with cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the fish is cooked through.
- Remove from heat and stir in chopped cilantro, parsley, and lemon juice. Let the mixture cool slightly.
- Lay out a sheet of warka or spring roll pastry on a clean surface. Cut it in half lengthwise to create two strips.
- Place a tablespoon of the fish mixture at one end of each strip. Fold the pastry over the filling to form a triangle, then continue folding the triangle over itself until you reach the end of the strip. Seal the end with beaten egg.
- Repeat this process with the remaining pastry sheets and filling.
- In a deep frying pan, heat vegetable oil over medium heat until hot. Fry the briouats in batches until golden brown and crispy, about 2-3 minutes per side.
- Remove from oil and drain on paper towels. Serve hot.
