Ingredients

  • White fish fillets - 200 grams (like cod or haddock)
  • Onion - 1 medium, finely chopped

  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Warka or spring roll pastry sheets - 4 sheets
  • Egg - 1, beaten (for sealing)
  • Vegetable oil - for frying

Steps

  1. In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add the fish fillets to the pan, breaking them into small pieces as they cook. Season with cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the fish is cooked through.
  4. Remove from heat and stir in chopped cilantro, parsley, and lemon juice. Let the mixture cool slightly.
  5. Lay out a sheet of warka or spring roll pastry on a clean surface. Cut it in half lengthwise to create two strips.
  6. Place a tablespoon of the fish mixture at one end of each strip. Fold the pastry over the filling to form a triangle, then continue folding the triangle over itself until you reach the end of the strip. Seal the end with beaten egg.
  7. Repeat this process with the remaining pastry sheets and filling.
  8. In a deep frying pan, heat vegetable oil over medium heat until hot. Fry the briouats in batches until golden brown and crispy, about 2-3 minutes per side.
  9. Remove from oil and drain on paper towels. Serve hot.
